Ingredients

The Goat Cheese Balls

  • 3 tablespoons chopped almonds
  • 3 tablespoons chopped craisins
  • 4 oz soft goat cheese log, cold

The Dressing

  • 1 tablespoon red wine vinegar
  • tablespoons cider vinegar
  • tablespoons olive oil
  • 1 teaspoon minced shallots
  • 1 tablespoon honey

The Salad

  • 5 oz mixed baby greens
  • cups sliced strawberries

Instructions

  1. Roll the goat cheese into 12 small balls, about 1/3 oz each.
  2. In a small bowl, combine chopped almonds and craisins, then roll the cheese balls in the mixture and refrigerate.
  3. In another small bowl, whisk together the dressing ingredients.
  4. In a large salad bowl, combine the salad ingredients and toss with the dressing, or divide them among plates.
