Kale Pomegranate Salad with Butternut Squash & Apple

Dressing

Instructions
- Make the dressing by whisking together lemon juice, olive oil, white balsamic vinegar, honey, and dijon mustard in a small bowl. Add salt to taste.
- In a large bowl, combine kale and olive oil. Massage the kale for about 1 minute to make it tender.
- Add pomegranate seeds, sliced apple, and red onion to the bowl with the kale.
- Pour the dressing over the salad and combine gently.
- Add roasted butternut squash and pecans just before serving.
