Kale Pomegranate Salad

Ingredients

Dressing

  • ¼ cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 2 teaspoons Dijon mustard
  • 1 clove minced garlic
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Salad

  • 1 large bunch kale
  • ½ cup pomegranate seeds
  • 1 small red onion
  • 1 orange peeled and sectioned
  • ¼ cup crumbled goat cheese
  • ¼ cup toasted walnuts

Instructions

  1. Combine the dressing ingredients in a blender or jar and mix until combined.
  2. Place the kale in a large bowl and massage with 2 tablespoons of the dressing for about 3 minutes.
  3. Add the pomegranate, red onion, orange, goat cheese, and walnuts to the bowl.
  4. Pour the remaining dressing over the salad and toss to combine.
