Pomegranate, Kale, and Wild Rice Salad

The salad

The dressing

minced onion or shallot

lemon or orange juice
Instructions
- Prep the salad ingredients and chill them in the fridge if desired.
- Mince the onion or shallot and sauté in olive oil until soft, then transfer to a food processor.
- Pulse the sautéed onion or shallot with the remaining dressing ingredients until smooth.
- Toss the salad ingredients with the dressing just before serving.
