Kale and Pomegranate Salad with Pears

Ingredients

For the Dressing

  • ¼ cup POM Wonderful 100% Pomegranate Juice
  • ¼ cup olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • teaspoon salt

For the Salad

  • 8 cups kale, deboned and chopped
  • ½ cup raw walnuts
  • 2 oz. goat cheese crumbles
  • 2 medium pears, sliced
  • cup POM Wonderful Arils (optional)
  • ½ medium red onion, thinly sliced

Optional Additions

  • ½ cup cooked quinoa, per serving
  • 4 oz. chicken breast, per serving

Instructions

  1. Prepare the dressing by combining all dressing ingredients in a mason jar and shake well.
  2. Preheat the oven to 325°F and bake the walnuts on a baking sheet for 6-8 minutes.
  3. In a large bowl, massage the chopped kale with the dressing for 3-5 minutes.
  4. Add the remaining salad ingredients to the kale and toss well.
  5. Serve as is or top with optional protein like quinoa or chicken.
