Ingredients

The Salad

  • 8-10 ounces kale
  • ¼ cup olive oil
  • 3 Tablespoons freshly squeezed lemon juice
  • 1 Tablespoon honey
  • ½ teaspoon ground cumin
  • to taste sea salt
  • to taste freshly ground black pepper
  • 1 shallot
  • 2 large pears
  • 4 ounces crumbled goat cheese
  • cup candied pecans
  • cup dried cranberries

The Dressing

  • ¼ cup olive oil
  • 3 Tablespoons freshly squeezed lemon juice
  • 1 Tablespoon honey
  • ½ teaspoon ground cumin
  • to taste sea salt
  • to taste freshly ground black pepper

Instructions

  1. Prepare the kale by washing, drying, and cutting it into small pieces. Massage with olive oil and lemon juice until tender.
  2. In a small bowl, whisk together the remaining olive oil, lemon juice, honey, cumin, salt, and pepper to make the dressing.
  3. Drizzle the dressing over the massaged kale and add the minced shallot. Toss to combine.
  4. Prepare the pears by washing, slicing in half, and removing the seeds. Drizzle with lemon juice to prevent browning.
  5. Top the dressed salad with goat cheese, candied pecans, cranberries, and chopped pears. Toss to combine and serve.
