Instructions
- Combine lemon juice, Dijon mustard, maple syrup, olive oil, oregano, and salt in a jar and shake well to emulsify.
- Adjust the flavors of the dressing to your taste.
- Toss each serving of baby greens with 1-2 tablespoons of dressing and marinate for 10 minutes.
- Top each serving with ½ sliced ripe pear and 1 ounce of crumbled feta cheese before serving.
