Kale, Pear & Feta Salad

Ingredients

Lemon Dressing

  • 3 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1-2 teaspoons pure maple syrup
  • 6 tablespoons extra-virgin olive oil
  • 1 teaspoon dried oregano
  • a pinch sea salt

Salad Assembly

  • as desired assorted baby kale, spinach or chard
  • ½ ripe pear sliced per serving
  • 1 oz crumbled feta per serving

Instructions

  1. Combine lemon juice, Dijon mustard, maple syrup, olive oil, oregano, and salt in a jar and shake well to emulsify.
  2. Adjust the flavors of the dressing to your taste.
  3. Toss each serving of baby greens with 1-2 tablespoons of dressing and marinate for 10 minutes.
  4. Top each serving with ½ sliced ripe pear and 1 ounce of crumbled feta cheese before serving.
