Ingredients

The salad

  • 6 cups Arugula
  • 1 large Avocado
  • ¼ cup Red onion
  • 1 cup Pomegranate seeds
  • ½ cup Pecans
  • ½ cup Goat cheese

The dressing

  • ¼ cup Olive oil
  • 1 tbsp Honey
  • 1 tbsp Lemon juice
  • 1 tsp Dijon mustard
  • tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. Combine arugula, avocado, red onion, pomegranate seeds, pecans, and goat cheese in a large bowl.
  2. Whisk together olive oil, honey, lemon juice, Dijon mustard, salt, and pepper in a small bowl to make the dressing.
  3. Drizzle the dressing over the salad and toss to combine.
