Air Fryer Parmesan Asparagus Fries

Ingredients

  • 4 stalks Asparagus, ends trimmed
  • cup All Purpose Flour
  • 2 egg whites Egg whites, beaten with 2 tsp. of water
  • 1 cup Panko Bread Crumbs
  • ½ cup Parmesan cheese, grated
  • 4 tbsp Lemon Zest, divided
  • cup Olive Oil Mayonnaise
  • 1 tsp Large Garlic Clove, finely minced
  • to taste Salt and pepper

Instructions

  1. Preheat the air fryer to 400 degrees.
  2. Trim the asparagus about 1 inch from the bottom.
  3. Spray a baking sheet with cooking spray.
  4. Set up a breading station with flour, egg whites, and a mixture of Panko, Parmesan, and half of the lemon zest.
  5. Roll the asparagus in flour, then egg, and finally the Panko mixture.
  6. Spray the tops with cooking spray and air fry for 7-8 minutes until golden.
  7. Mix the mayonnaise, remaining lemon zest, and garlic in a small bowl.
  8. Serve the asparagus fries with the lemon garlic aioli, garnished with more lemon zest or Parmesan.
