Air Fryer Asparagus Fries

Ingredients

  • 1 pound large asparagus spears, trimmed
  • ½ to 1 cup gluten-free seasoned panko bread crumbs
  • 2 to 3 Tablespoons grated parmesan or dairy-free grated cheese
  • 1 Tablespoon light olive oil
  • 1 Tablespoon gluten-free oat flour or gluten-free flour of choice
  • 1 large egg, whisked
  • 2 Tablespoons non-dairy milk
  • to taste spray avocado or olive oil cooking spray

Instructions

  1. Wash, pat dry, and trim the asparagus.
  2. Place asparagus in a ziplock bag with flour and coat.
  3. Whisk together panko, parmesan cheese, and olive oil, then divide into two bowls.
  4. In a small bowl, whisk egg and milk, then pour into the bag to coat the asparagus.
  5. Roll the asparagus in the panko mixture and place on a lined pan.
  6. Preheat the air fryer to 400°F and spray the basket with cooking oil.
  7. Place the coated asparagus in a single layer in the air fryer and cook for 8 to 10 minutes until crispy and golden.
