Instructions
- 1. Simmer the milk and cream in a saucepan over low heat, then set aside.
- 2. Whisk the egg yolks and sugar in a bowl until pale and fluffy.
- 3. Mix the matcha powder into the egg and sugar mixture.
- 4. Gradually add the warm milk mixture to the egg mixture while whisking until smooth.
- 5. Strain the mixture back into a saucepan and heat for 5 minutes while stirring continuously.
- 6. Chill the mixture in the fridge.
- 7. Pour the mixture into an ice cream maker and churn for about 20 minutes until thick.
- 8. Freeze the churned mixture until set.
