Ingredients

  • 250 ml Milk
  • 125 ml Heavy cream
  • 2 egg yolks Egg yolks
  • 75 g Caster sugar
  • 1 tbs Matcha green tea powder

Instructions

  1. 1. Simmer the milk and cream in a saucepan over low heat, then set aside.
  2. 2. Whisk the egg yolks and sugar in a bowl until pale and fluffy.
  3. 3. Mix the matcha powder into the egg and sugar mixture.
  4. 4. Gradually add the warm milk mixture to the egg mixture while whisking until smooth.
  5. 5. Strain the mixture back into a saucepan and heat for 5 minutes while stirring continuously.
  6. 6. Chill the mixture in the fridge.
  7. 7. Pour the mixture into an ice cream maker and churn for about 20 minutes until thick.
  8. 8. Freeze the churned mixture until set.
