Ingredients

The pancakes

  • 2 Tbsp melted vegan butter
  • 2 Tbsp nut butter
  • 2 tsp vanilla extract
  • 1 Tbsp maple syrup
  • ½ cup unsweetened dairy-free milk
  • 2 large eggs
  • 1 Tbsp baking powder
  • 1 ¼ – 1 ½ cups almond flour

For topping (optional)

  • to taste berry compote
  • to taste nut butter
  • to taste vegan butter
  • to taste maple syrup

Instructions

  1. Combine melted vegan butter, nut butter, vanilla extract, and maple syrup in a mixing bowl and whisk together.
  2. Add dairy-free milk and eggs, whisking until combined.
  3. Mix in baking powder, then gradually add almond flour until you achieve a cake batter texture.
  4. Heat a skillet over medium heat and grease it with oil or butter.
  5. Pour ¼ cup of batter onto the skillet for each pancake and cook until the edges are dry and the surface is shiny, about 3 minutes.
  6. Flip the pancakes and cook until golden brown, about 2 minutes more.
  7. Serve immediately with your choice of toppings.
