Instructions
- Combine melted vegan butter, nut butter, vanilla extract, and maple syrup in a mixing bowl and whisk together.
- Add dairy-free milk and eggs, whisking until combined.
- Mix in baking powder, then gradually add almond flour until you achieve a cake batter texture.
- Heat a skillet over medium heat and grease it with oil or butter.
- Pour ¼ cup of batter onto the skillet for each pancake and cook until the edges are dry and the surface is shiny, about 3 minutes.
- Flip the pancakes and cook until golden brown, about 2 minutes more.
- Serve immediately with your choice of toppings.
