Ingredients

The chicken

  • 1 tablespoon olive oil
  • ½ cup chopped onions
  • 2-3 cloves garlic, minced
  • 1½-2 pounds skinless chicken breasts
  • 1 cup chicken broth
  • 15.5 oz diced tomatoes and chilies

The seasoning

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 teaspoon cayenne pepper (optional)
  • to taste salt and pepper

The tortillas and toppings

  • as needed corn or flour tortillas
  • as needed salsa
  • as needed shredded cheese
  • as needed shredded lettuce
  • as needed Greek yogurt or sour cream

Instructions

  1. 1. Set the Instant Pot to the Saute function and heat the olive oil.
  2. 2. Add the chopped onions and cook until translucent.
  3. 3. Stir in the minced garlic.
  4. 4. Add the chicken broth, chicken breasts, and taco seasoning; stir to combine.
  5. 5. Top with diced tomatoes and chilies without stirring.
  6. 6. Pressure cook for 10 minutes with a natural release of steam for 10 minutes.
  7. 7. Remove the chicken, shred it with forks, and return it to the pot to mix.
  8. 8. Serve the chicken on tortillas with optional toppings.
