Instructions
- 1. Set the Instant Pot to the Saute function and heat the olive oil.
- 2. Add the chopped onions and cook until translucent.
- 3. Stir in the minced garlic.
- 4. Add the chicken broth, chicken breasts, and taco seasoning; stir to combine.
- 5. Top with diced tomatoes and chilies without stirring.
- 6. Pressure cook for 10 minutes with a natural release of steam for 10 minutes.
- 7. Remove the chicken, shred it with forks, and return it to the pot to mix.
- 8. Serve the chicken on tortillas with optional toppings.
