Ingredients

The chicken

  • pounds boneless skinless chicken

The cooking base

  • 3 tablespoons butter
  • ¼ cup taco seasoning
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • cups chicken broth

For serving

  • to taste tortillas or hard taco shells
  • to taste salsa
  • to taste avocado or guacamole
  • to taste shredded cheese
  • to taste shredded lettuce
  • to taste chopped tomatoes
  • to taste sour cream

Instructions

  1. Set the Instant Pot to high sauté mode.
  2. Melt the butter in the pot.
  3. Add taco seasoning, tomato paste, and minced garlic; stir for 30 seconds.
  4. Cancel the sauté mode.
  5. Pour in the chicken broth, scraping the bottom of the pot.
  6. Add the chicken and close the lid.
  7. Set the valve to sealing and cook on high pressure for 8 minutes.
  8. Allow the pressure to release naturally for 10 minutes, then do a quick release.
  9. Shred the chicken using forks or a stand mixer.
