Healthy Veggie Mac and Cheese

finely crushed potato chips

vegan Parmesan
The sauce

cooked potato

tablespoons
cooked sweet or yellow onion

raw cashews

cups
cashew milk

garlic

lemon juice

tablespoon
apple cider vinegar

ground mustard
Instructions
- 1. Boil the cashews, potato, and onion in water for 15-20 minutes.
- 2. Preheat the oven to 350°F (175°C).
- 3. Drain the boiled ingredients and blend them with the other sauce ingredients until smooth.
- 4. Cook the pasta according to package directions, adding the veggies two minutes before it's done.
- 5. Drain the pasta, rinse, and return it to the pot.
- 6. Mix in the cream sauce thoroughly.
- 7. Pour the mixture into a baking dish and top with crushed potato chips and Parmesan.
- 8. Bake for 20 minutes until the top is browned.
- 9. Serve and enjoy!
