Healthy Veggie Mac and Cheese

Ingredients

The pasta

  • 12 ounces your favorite pasta
  • 4 cups veggies of choice
  • 1 cup finely crushed potato chips
  • ½ cup vegan Parmesan

The sauce

  • ¾ cup cooked potato
  • 6 tablespoons cooked sweet or yellow onion
  • ¾ cup raw cashews
  • cups cashew milk
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 1½ - 2 teaspoons sea salt
  • ¼ teaspoon ground mustard

Instructions

  1. 1. Boil the cashews, potato, and onion in water for 15-20 minutes.
  2. 2. Preheat the oven to 350°F (175°C).
  3. 3. Drain the boiled ingredients and blend them with the other sauce ingredients until smooth.
  4. 4. Cook the pasta according to package directions, adding the veggies two minutes before it's done.
  5. 5. Drain the pasta, rinse, and return it to the pot.
  6. 6. Mix in the cream sauce thoroughly.
  7. 7. Pour the mixture into a baking dish and top with crushed potato chips and Parmesan.
  8. 8. Bake for 20 minutes until the top is browned.
  9. 9. Serve and enjoy!
