Green Curry Shrimp

Ingredients

  • 2 tablespoons cooking oil
  • 2 – 2 ½ tablespoons green curry paste
  • 1 cup water
  • 1 lb jumbo shrimp, shelled, deveined, tail-on
  • ½ cup coconut milk
  • ¾ tablespoon fish sauce
  • ½ tablespoon Thai palm sugar
  • 4 oz zucchinis, sliced and halved
  • 2 oz red bell peppers, seeded and cut into strips
  • ½ tablespoon cilantro, chopped

Instructions

  1. Heat oil in a small pot over high heat and sauté the green curry paste briefly.
  2. Add water and bring it to a boil, then add the shrimp.
  3. Once the shrimp are cooked, add coconut milk, fish sauce, palm sugar, zucchini, and red bell peppers.
  4. Cook for 1 minute while stirring, then turn off the heat and add chopped cilantro.
  5. Serve immediately.
