Ingredients

The salad

  • 1 unit mango
  • 1 unit cucumber

The dressing

  • ¼ cup rice vinegar
  • 2 Tbsp white sugar
  • tsp salt
  • tsp red pepper flakes

Instructions

  1. Wash the cucumber and peel it in alternating strips for decoration, then slice it into half-rounds.
  2. Cut the mango into slices by removing the cheeks and scooping the flesh from the skin, then cut the slices in half.
  3. In a small bowl, combine rice vinegar, sugar, salt, and red pepper flakes, stirring until the sugar dissolves.
  4. In a large bowl, combine the sliced cucumber and mango, then pour the dressing over and stir to coat.
  5. Serve immediately or refrigerate until ready to eat, stirring before serving.
