Instructions
- Wash the cucumber and peel it in alternating strips for decoration, then slice it into half-rounds.
- Cut the mango into slices by removing the cheeks and scooping the flesh from the skin, then cut the slices in half.
- In a small bowl, combine rice vinegar, sugar, salt, and red pepper flakes, stirring until the sugar dissolves.
- In a large bowl, combine the sliced cucumber and mango, then pour the dressing over and stir to coat.
- Serve immediately or refrigerate until ready to eat, stirring before serving.
