Instructions
- Dice the cucumber into small, bite-sized pieces.
- Finely dice the red onion and set it aside.
- Peel the mango, remove the pit, and dice the mango flesh into similar-sized pieces as the cucumber.
- Chop the cilantro leaves finely.
- In a large bowl, combine the diced cucumber, red onion, mango, and cilantro.
- In a separate small bowl, make your honey lime vinaigrette.
- Pour the dressing over the cucumber, mango, onion, and cilantro mixture and gently toss to coat evenly.
