Ingredients

The salad

  • 4 cups cucumber, diced
  • ΒΌ cup red onion, finely diced
  • 1 cup mango, diced
  • 2 tbsp cilantro, chopped

The dressing

  • 1 batch honey lime vinaigrette

Instructions

  1. Dice the cucumber into small, bite-sized pieces.
  2. Finely dice the red onion and set it aside.
  3. Peel the mango, remove the pit, and dice the mango flesh into similar-sized pieces as the cucumber.
  4. Chop the cilantro leaves finely.
  5. In a large bowl, combine the diced cucumber, red onion, mango, and cilantro.
  6. In a separate small bowl, make your honey lime vinaigrette.
  7. Pour the dressing over the cucumber, mango, onion, and cilantro mixture and gently toss to coat evenly.
