Instructions
- Heat the oil in a large non-stick skillet over medium heat.
- Add the mushrooms and cook until soft, about 5 minutes.
- Reduce heat to medium-low and continue cooking until crispy, about 5 more minutes.
- Add minced ginger and garlic, cooking for 2 minutes until softened.
- Stir in sugar, tomato paste, basil, sambal, soy sauce, and rice wine vinegar, mixing well.
- Add water and bring to a gentle simmer for about 10 minutes to thicken the sauce.
- Cook the noodles in salted water until al dente.
- Transfer the noodles to the skillet with the sauce and add butter, tossing until coated.
- Serve in bowls and garnish with additional basil.
