Spicy Sambal Mushroom Noodles

Ingredients

  • 1 tablespoon neutral oil
  • 1 pound oyster mushrooms
  • 1 tablespoon minced fresh ginger
  • 2 cloves garlic
  • 1 tablespoon white granulated sugar
  • 2 tablespoons tomato paste
  • 4 sprigs fresh basil
  • cup sambal oelek chili paste
  • ¼ cup soy sauce
  • ¼ cup rice wine vinegar
  • ½ cup water
  • pounds linguine or ramen noodles
  • 2 tablespoons unsalted butter

Instructions

  1. Heat the oil in a large non-stick skillet over medium heat.
  2. Add the mushrooms and cook until soft, about 5 minutes.
  3. Reduce heat to medium-low and continue cooking until crispy, about 5 more minutes.
  4. Add minced ginger and garlic, cooking for 2 minutes until softened.
  5. Stir in sugar, tomato paste, basil, sambal, soy sauce, and rice wine vinegar, mixing well.
  6. Add water and bring to a gentle simmer for about 10 minutes to thicken the sauce.
  7. Cook the noodles in salted water until al dente.
  8. Transfer the noodles to the skillet with the sauce and add butter, tossing until coated.
  9. Serve in bowls and garnish with additional basil.
