Spicy Oyster Mushroom and Lemongrass Stir-Fry

Ingredients

  • 2 Tbsp. peanut or vegetable oil
  • tsp. peanut or vegetable oil
  • ½ small red or yellow onion
  • 3 Tbsp. finely chopped lemongrass
  • 1 large Fresno chile or jalapeño
  • 1 Tbsp. finely chopped garlic
  • tsp. Madras-style curry powder
  • ¼ tsp. sugar
  • tsp. ground turmeric (optional)
  • ½ tsp. Diamond Crystal or kosher salt
  • 10 oz. oyster mushrooms
  • 4 oz. sugar snap or snow peas
  • 1 Tbsp. vegan or regular fish sauce

Instructions

  1. Heat oil in a large wok or skillet over medium heat.
  2. Add onion and lemongrass, cooking until softened.
  3. Stir in chopped chile, garlic, curry powder, sugar, turmeric, and salt, cooking until fragrant.
  4. Add oyster mushrooms and cook until coated and firm-tender.
  5. Stir in sugar snap or snow peas and cook until warmed through.
  6. Add fish sauce and adjust seasoning if necessary, then serve immediately.
