Instructions
- Heat oil in a large wok or skillet over medium heat.
- Add onion and lemongrass, cooking until softened.
- Stir in chopped chile, garlic, curry powder, sugar, turmeric, and salt, cooking until fragrant.
- Add oyster mushrooms and cook until coated and firm-tender.
- Stir in sugar snap or snow peas and cook until warmed through.
- Add fish sauce and adjust seasoning if necessary, then serve immediately.
