Ingredients

The Vegetables

  • 2 medium sweet potatoes, peeled and cubed
  • 12 oz fresh green beans, trimmed
  • 1 small red onion, sliced

The Protein

  • 3 slices bacon, chopped
  • 1.5 lbs boneless, skinless chicken thighs

The Seasonings and Oil

  • 2 tablespoons fresh thyme
  • 2 teaspoons avocado oil, divided
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

The Dressing

  • ¼–½ cup ranch dressing

Instructions

  1. Preheat the oven to 425°F and prepare a large sheet pan with nonstick spray.
  2. Combine sweet potatoes, green beans, red onion, bacon, and thyme on the sheet pan, drizzle with 1 teaspoon of avocado oil, and toss to coat.
  3. Pat the chicken thighs dry with paper towels, arrange them on the pan, and brush with the remaining avocado oil.
  4. Season all ingredients with salt and pepper, adding extra thyme if desired.
  5. Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F.
  6. Remove from the oven, drizzle ranch dressing on top, and serve warm.
