The Dressing
Instructions
- Preheat the oven to 425°F and prepare a large sheet pan with nonstick spray.
- Combine sweet potatoes, green beans, red onion, bacon, and thyme on the sheet pan, drizzle with 1 teaspoon of avocado oil, and toss to coat.
- Pat the chicken thighs dry with paper towels, arrange them on the pan, and brush with the remaining avocado oil.
- Season all ingredients with salt and pepper, adding extra thyme if desired.
- Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F.
- Remove from the oven, drizzle ranch dressing on top, and serve warm.
