Bacon Ranch Chicken Foil Packets

Instructions
- 1. Preheat the oven to 425°F or prepare a grill over medium-high heat.
- 2. In a bowl, whisk together the melted butter, ranch seasoning, salt, and pepper.
- 3. Coat four large squares of foil with nonstick cooking spray.
- 4. Place the potatoes in a bowl and drizzle with 4 tablespoons of the ranch butter, tossing to coat.
- 5. Place a chicken breast on each foil square and season with salt and pepper.
- 6. Divide the potatoes evenly among the foil squares, arranging them around the chicken.
- 7. Drizzle the remaining 2 tablespoons of butter over the chicken breasts.
- 8. Fold the edges of the foil over the chicken and potatoes to create a packet.
- 9. Bake for 45 minutes or grill for 30 minutes.
- 10. Open the packets and sprinkle cheese over the chicken and potatoes, then return to heat for 2-3 minutes until cheese melts.
- 11. Sprinkle with bacon and parsley before serving.
