Bacon Ranch Chicken Foil Packets

Ingredients

  • 6 tablespoons butter, melted
  • 2 tablespoons ranch seasoning powder
  • to taste salt
  • to taste black pepper
  • 4 pieces boneless skinless chicken breasts, approximately 4 ounces each
  • 1 pound small red potatoes, halved or quartered
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons chopped parsley

Instructions

  1. 1. Preheat the oven to 425°F or prepare a grill over medium-high heat.
  2. 2. In a bowl, whisk together the melted butter, ranch seasoning, salt, and pepper.
  3. 3. Coat four large squares of foil with nonstick cooking spray.
  4. 4. Place the potatoes in a bowl and drizzle with 4 tablespoons of the ranch butter, tossing to coat.
  5. 5. Place a chicken breast on each foil square and season with salt and pepper.
  6. 6. Divide the potatoes evenly among the foil squares, arranging them around the chicken.
  7. 7. Drizzle the remaining 2 tablespoons of butter over the chicken breasts.
  8. 8. Fold the edges of the foil over the chicken and potatoes to create a packet.
  9. 9. Bake for 45 minutes or grill for 30 minutes.
  10. 10. Open the packets and sprinkle cheese over the chicken and potatoes, then return to heat for 2-3 minutes until cheese melts.
  11. 11. Sprinkle with bacon and parsley before serving.
