Ingredients

The potatoes

  • pounds Russet potatoes, cut into 1 inch pieces

The toppings

  • 4 tablespoons butter, melted
  • tablespoons ranch seasoning powder
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • ¼ cup sour cream
  • 2 tablespoons chives, sliced
  • to taste cooking spray

Instructions

  1. Preheat the grill to medium heat or the oven to 400°F.
  2. Coat 4 large squares of foil with cooking spray.
  3. In a large bowl, combine the diced potatoes with melted butter and ranch seasoning, tossing to coat.
  4. Divide the potato mixture evenly among the foil squares and fold to seal the packets.
  5. Grill or bake the packets for 25-30 minutes until the potatoes are tender.
  6. Open the packets and add cheese and bacon, then return to the grill or oven for 3-5 minutes until the cheese is melted.
  7. Top each packet with sour cream and chives, then serve immediately.
