Grilled Potatoes and Onions

Ingredients

  • 1 potato per person potato (any kind, preferably Russetts, red, or Yukon Gold)
  • ½ small onion per person small onion
  • 1 Tbsp. butter (cut into pieces)
  • ¼ tsp. salt
  • to taste freshly-ground black pepper
  • to taste smoked paprika
  • 1 sheet per person aluminum foil

Instructions

  1. Tear aluminum foil sheets into about 16" pieces and fold each in half.
  2. Preheat the grill.
  3. Slice potatoes into pieces about ⅛-¼" thick.
  4. Slice onions about ⅛" thick.
  5. Place one potato in the center of each foil square and add butter pieces.
  6. Sprinkle with salt, pepper, and smoked paprika, then top with onions.
  7. Fold the edges of the foil to secure tightly to retain moisture.
  8. Set the grill to low heat and place each packet on the grill.
  9. Close the lid and cook for 15 minutes, then turn the packets and cook for another 15 minutes.
  10. Remove from heat and carefully open each packet.
