Grilled Potatoes

The potatoes

small yellow or red potatoes
The seasonings

smoked paprika (optional)

For grilling

chopped fresh herbs (such as parsley, chives, and/or dill)
Instructions
- Place the potatoes in a large pot, cover with cold water, and add 1 teaspoon of salt.
- Bring to a boil, then simmer for 8 to 15 minutes until fork-tender. Drain and let cool before cutting in half.
- Preheat the grill to medium heat.
- In a bowl, toss the halved potatoes with olive oil, garlic powder, onion powder, smoked paprika (if using), the remaining salt, and black pepper.
- Brush or spray the grill grates with avocado oil.
- Grill the potatoes cut-side down for 5 to 6 minutes until char marks form, then flip and grill for another 5 minutes until tender and well-charred.
- Season to taste and sprinkle with fresh herbs before serving.
