Grilled Potatoes

Ingredients

The potatoes

  • 2 pounds small yellow or red potatoes

The seasonings

  • 2 teaspoons sea salt
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika (optional)
  • to taste freshly ground black pepper

For grilling

  • as needed avocado oil or cooking spray

For garnish

  • as needed chopped fresh herbs (such as parsley, chives, and/or dill)

Instructions

  1. Place the potatoes in a large pot, cover with cold water, and add 1 teaspoon of salt.
  2. Bring to a boil, then simmer for 8 to 15 minutes until fork-tender. Drain and let cool before cutting in half.
  3. Preheat the grill to medium heat.
  4. In a bowl, toss the halved potatoes with olive oil, garlic powder, onion powder, smoked paprika (if using), the remaining salt, and black pepper.
  5. Brush or spray the grill grates with avocado oil.
  6. Grill the potatoes cut-side down for 5 to 6 minutes until char marks form, then flip and grill for another 5 minutes until tender and well-charred.
  7. Season to taste and sprinkle with fresh herbs before serving.
