Instructions
- Mix the chili powder, cumin, garlic powder, onion powder, salt, and pepper in a small bowl.
- Preheat the oven to 400°F or grill to medium high heat.
- Divide the seasoning mixture in half; mix half into the melted butter.
- Coat four large squares of foil with cooking spray.
- Place a chicken breast in the center of each foil square and season with the remaining spice mixture.
- Arrange the peppers, onion, and black beans around the chicken.
- Drizzle 1 tablespoon of the butter mixture over the chicken and vegetables.
- Fold the foil around the chicken mixture to seal completely.
- Bake for 40 minutes or grill for 35 minutes.
- Open the foil packets carefully and sprinkle cheese over the chicken and vegetables.
- Return to the grill or oven for 2-3 minutes until the cheese is melted.
- Sprinkle with cilantro and add desired toppings before serving with tortillas.
