Ingredients

The main ingredients

  • 4 tablespoons butter, melted
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 4 4-ounce boneless skinless chicken breasts
  • 2 cups sliced bell peppers
  • 1 can black beans, drained and rinsed
  • ½ cup sliced onion
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped cilantro

Toppings

  • to taste sliced olives
  • to taste salsa

Instructions

  1. Mix the chili powder, cumin, garlic powder, onion powder, salt, and pepper in a small bowl.
  2. Preheat the oven to 400°F or grill to medium high heat.
  3. Divide the seasoning mixture in half; mix half into the melted butter.
  4. Coat four large squares of foil with cooking spray.
  5. Place a chicken breast in the center of each foil square and season with the remaining spice mixture.
  6. Arrange the peppers, onion, and black beans around the chicken.
  7. Drizzle 1 tablespoon of the butter mixture over the chicken and vegetables.
  8. Fold the foil around the chicken mixture to seal completely.
  9. Bake for 40 minutes or grill for 35 minutes.
  10. Open the foil packets carefully and sprinkle cheese over the chicken and vegetables.
  11. Return to the grill or oven for 2-3 minutes until the cheese is melted.
  12. Sprinkle with cilantro and add desired toppings before serving with tortillas.
