Instructions
- Prepare the marinade by combining olive oil, lime juice, sugar, salt, cumin, garlic, water, smoked paprika, onion powder, and chili powder in a resealable bag or bowl.
- Add the chicken, onions, and peppers to the marinade and chill for at least 1 hour.
- Heat olive oil in a large pan over medium heat.
- Add the marinated chicken and pepper mixture to the pan and cook for 6-8 minutes until the chicken is cooked through and vegetables are tender.
- Season with salt to taste and sprinkle with cilantro before serving with tortillas and toppings.
