Ingredients

The marinade

  • pounds boneless skinless chicken breasts, sliced
  • ¼ cup olive oil
  • cup lime juice
  • 1 teaspoon sugar
  • teaspoons salt
  • ¼ teaspoon ground cumin
  • 2 cloves garlic, minced
  • ¼ cup water
  • teaspoons smoked paprika
  • 1 teaspoon onion powder
  • tablespoons chili powder

The fajitas

  • 2 teaspoons olive oil
  • 1 yellow onion thinly sliced
  • 3 bell peppers thinly sliced (red, orange, yellow or a combination)
  • to taste salt
  • 2 tablespoons chopped cilantro
  • as needed tortillas, guacamole, sour cream, cheese, salsa, etc. for serving

Instructions

  1. Prepare the marinade by combining olive oil, lime juice, sugar, salt, cumin, garlic, water, smoked paprika, onion powder, and chili powder in a resealable bag or bowl.
  2. Add the chicken, onions, and peppers to the marinade and chill for at least 1 hour.
  3. Heat olive oil in a large pan over medium heat.
  4. Add the marinated chicken and pepper mixture to the pan and cook for 6-8 minutes until the chicken is cooked through and vegetables are tender.
  5. Season with salt to taste and sprinkle with cilantro before serving with tortillas and toppings.
