Ingredients

Marinade

  • ¼ cup lime juice
  • 2 tsp chili powder

  • ¼ cup neutral oil

Main Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 pieces bell peppers
  • 1 large yellow onion
  • 1 Tbsp neutral oil
  • to taste kosher salt
  • to taste freshly ground black pepper
  • as needed corn tortillas
  • as needed lime wedges

Instructions

  1. Whisk together lime juice, chili powder, crushed red pepper flakes, ¼ cup oil, and 1 tsp. cumin in a large bowl.
  2. Season chicken with salt and pepper, add to the bowl, and toss to coat. Cover and refrigerate for at least 30 minutes.
  3. Heat remaining 1 Tbsp. oil in a large skillet over medium heat.
  4. Add the marinated chicken and cook until golden brown, about 8 minutes per side, ensuring it reaches 160°F internally.
  5. Transfer the chicken to a cutting board, let it rest for 10 minutes, then slice into strips.
  6. In the same skillet, combine sliced bell peppers, onion, and remaining 1 tsp. cumin, season with salt and pepper, and cook until softened, about 7 minutes.
  7. Return the sliced chicken to the skillet and toss until combined. Serve with tortillas and lime wedges.
