Chicken Fajitas

Ingredients

The Chicken and Vegetables

  • 3 pieces boneless skinless chicken breasts
  • 1 piece onion
  • 3 pieces bell peppers
  • 2 tablespoons olive oil
  • ½ piece lime

Fajita Seasoning

  • ½ tablespoon chili powder
  • ½ tablespoon ground cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

For Serving

  • to taste none tortillas
  • to taste none sour cream
  • to taste none pico de gallo
  • to taste none avocado

Instructions

  1. Make the fajita seasoning by mixing all the seasoning ingredients in a bowl.
  2. Season the chicken by sprinkling the seasoning on both sides and pressing it in.
  3. Heat oil in a skillet and sear the chicken for 7 to 8 minutes on each side.
  4. While the chicken cooks, slice the bell peppers and onion.
  5. Remove the chicken and let it rest, then sauté the bell peppers and onion in the same skillet for 4 to 5 minutes.
  6. Slice the chicken into strips and add it back to the skillet with a squeeze of lime juice, then stir everything together.
  7. Serve immediately with tortillas and desired toppings.
