Instructions
- Whisk together the chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper, and salt in a small bowl.
- In a large zipper-top plastic bag, combine chicken, cilantro, lime juice, and fajita seasoning. Mash to coat the chicken evenly and marinate for at least 30 minutes.
- Heat oil in a large skillet over medium-high heat until shimmering. Add the chicken and cook until crispy and browned on one side, about 8 minutes. Flip and cook until browned on the other side and the chicken reaches 165°F, about 8 to 10 minutes longer.
- Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing into strips.
- In the same skillet, add bell peppers and onions and cook until tender, about 5 minutes.
- Push the peppers and onions to one side and add the sliced chicken back to the skillet.
- Serve with warmed tortillas and your favorite toppings.
