Chicken Fajitas

Ingredients

Fajita Seasoning

  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • to taste salt

Marinade

  • 2 pounds boneless skinless chicken thighs
  • ¼ cup minced cilantro
  • 3 tablespoons lime juice

Fajitas

  • 2 tablespoons olive oil or vegetable oil
  • 3 large bell peppers (various colors)
  • 1 large red onion
  • to serve tortillas
  • to serve sour cream
  • to serve hot sauce
  • to serve lime wedges

Instructions

  1. Whisk together the chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper, and salt in a small bowl.
  2. In a large zipper-top plastic bag, combine chicken, cilantro, lime juice, and fajita seasoning. Mash to coat the chicken evenly and marinate for at least 30 minutes.
  3. Heat oil in a large skillet over medium-high heat until shimmering. Add the chicken and cook until crispy and browned on one side, about 8 minutes. Flip and cook until browned on the other side and the chicken reaches 165°F, about 8 to 10 minutes longer.
  4. Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing into strips.
  5. In the same skillet, add bell peppers and onions and cook until tender, about 5 minutes.
  6. Push the peppers and onions to one side and add the sliced chicken back to the skillet.
  7. Serve with warmed tortillas and your favorite toppings.
