Chicken Fajitas

Ingredients

  • 1 lb Boneless skinless chicken breasts
  • 2 tbsp Fajita seasoning
  • 2 tbsp Olive oil
  • 2 large Bell peppers (sliced into thin strips)
  • 1 medium Onion (sliced radially into half moons)
  • ½ tsp Sea salt
  • ¼ tsp Black pepper
  • Lime wedges optional

Instructions

  1. Pat the chicken breasts dry and season both sides with fajita seasoning.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the chicken breasts and sauté for 5-7 minutes per side until cooked through. Remove and cover with foil to keep warm.
  4. Add bell peppers and onions to the pan and sauté for 4-5 minutes until soft and browned, seasoning with salt and pepper.
  5. Slice the chicken against the grain and add it back to the skillet with the vegetables. Squeeze lime juice over the top if desired.
