Instructions
- Season the chicken thighs with salt and taco seasoning, ensuring all sides are covered, and let rest for at least 30 minutes.
- Heat a large cast iron skillet over medium-high heat and add a tablespoon of oil.
- Sear the chicken for about 8-10 minutes on each side until golden and cooked through, then transfer to a plate to rest.
- In the same skillet, add the onions and peppers, drizzle with the remaining oil, and cook until softened and slightly charred, about 4-5 minutes. Season with salt and pepper.
- Slice the chicken into strips and serve with the cooked vegetables, avocado, lime, tortillas, and any additional condiments.
