Ingredients

The Chicken

  • 2 pounds boneless skinless chicken thighs or breasts
  • 1 teaspoon salt
  • 2 teaspoons taco seasoning
  • 2 tablespoons cooking oil

The Vegetables

  • 1 red onion thinly sliced
  • 3 pieces bell peppers (green, red, and orange)
  • to taste salt and pepper

The Garnish

  • 2 fresh avocados, peeled, seeded and sliced
  • 1 lime cut in wedges, for garnish

Instructions

  1. Season the chicken thighs with salt and taco seasoning, ensuring all sides are covered, and let rest for at least 30 minutes.
  2. Heat a large cast iron skillet over medium-high heat and add a tablespoon of oil.
  3. Sear the chicken for about 8-10 minutes on each side until golden and cooked through, then transfer to a plate to rest.
  4. In the same skillet, add the onions and peppers, drizzle with the remaining oil, and cook until softened and slightly charred, about 4-5 minutes. Season with salt and pepper.
  5. Slice the chicken into strips and serve with the cooked vegetables, avocado, lime, tortillas, and any additional condiments.
