Easy Chicken Fajitas

Ingredients

The filling

  • 3 pieces boneless skinless chicken breasts
  • 1 medium onion
  • 1 piece lime
  • 3 pieces bell peppers (red, yellow, green or orange)

The seasoning and oil

  • 3 tablespoons olive oil
  • 1 teaspoon chili powder
  • ¾ teaspoon salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon cumin (optional)

Instructions

  1. Slice the onion and bell peppers.
  2. In a bowl, mix 1 tablespoon of olive oil, lime juice, chili powder, smoked paprika, onion powder, black pepper, cumin, and ½ teaspoon salt.
  3. Cut the chicken into strips and toss it with the spice mixture.
  4. Heat 1 tablespoon of olive oil in a pan over medium-high heat and cook half of the chicken until cooked through, about 3 to 5 minutes. Remove and set aside.
  5. Repeat with the remaining chicken.
  6. Add another tablespoon of olive oil to the pan, drain the onions if soaked, and cook for 2 minutes.
  7. Add the sliced peppers and the remaining ¼ teaspoon of salt, cooking for an additional 2 minutes until heated.
  8. Return the chicken to the pan, stir to combine, and squeeze additional lime over top.
  9. Serve the mixture in tortillas.
