Instructions
- Preheat the oven to 400°F and prepare a sheet pan with foil and cooking spray.
- Cut a slit lengthwise in each chicken breast to create a pocket.
- Mix cream cheese, cheddar, mozzarella, parsley, garlic powder, salt, and pepper in a bowl.
- Fill each chicken pocket with the cheese mixture and wrap each breast with 2 slices of bacon.
- Place the chicken on the sheet pan and scatter halved potatoes around them, seasoning with salt and pepper.
- Bake for 40 minutes, then broil for an additional 3-5 minutes until the bacon is crispy.
- Serve immediately, garnished with chopped parsley if desired.
