Asparagus Stuffed Chicken

Ingredients

The chicken

  • 4 slices uncured bacon, chopped
  • 2 tablespoons olive oil, divided
  • 4 4-6 ounce boneless skinless chicken breasts
  • 1 ½ teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • ¾ teaspoon coarse salt, divided
  • ½ teaspoon ground black pepper
  • 12 spears asparagus, trimmed
  • ¼ cup sliced Greek or kalamata olives (optional)
  • 4 slices muenster, provolone or mozzarella cheese

The potatoes

  • 1 pound fingerling potatoes, halved

Instructions

  1. Preheat the oven to 400 degrees.
  2. Cook the bacon in a skillet until crispy, then remove and set aside.
  3. Cut a pocket into the side of each chicken breast and season with Italian seasoning, garlic powder, salt, and pepper.
  4. Stuff each chicken breast with cheese, asparagus, crumbled bacon, and olives if using.
  5. Heat olive oil in the skillet and sear the stuffed chicken breasts until browned.
  6. Add the halved potatoes to the pan, season, and place the pan in the oven.
  7. Roast until the chicken reaches 165 degrees and the potatoes are fork-tender.
  8. Let the chicken rest for 5 minutes before serving.
