Bacon and Feta Stuffed Chicken Breast

Ingredients

The sauce

  • ¼ cup olive oil
  • 1 teaspoon lemon juice
  • 2 cloves garlic
  • teaspoons oregano
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

The stuffed chicken

  • 2 small (8oz) boneless skinless chicken breasts
  • ¾ cup (3oz) crumbled feta cheese
  • 4 slices cooked bacon

Instructions

  1. Preheat the oven to 400°F and grease a medium baking dish.
  2. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. Butterfly the chicken breasts and place them in the baking dish.
  4. Stuff each breast with about 1 ounce of feta and a third of the bacon.
  5. Close the breasts and sprinkle remaining feta and bacon on top.
  6. Pour the olive oil mixture over the stuffed breasts and bake for 25 to 35 minutes until cooked through.
  7. Allow to rest for five minutes before serving.
