Ingredients

The chicken

  • 1 pound boneless, skinless chicken breasts

The filling

  • 2 tablespoons pesto
  • ½ cup crumbled feta cheese
  • 1 package sun-dried tomatoes (8-ounce)
  • ¼ teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Butterfly each chicken breast, stopping about an inch from the edge.
  3. Spread pesto inside each breast and top with feta cheese and sun-dried tomatoes.
  4. Fold the breasts closed and secure with toothpicks if needed.
  5. Place the stuffed breasts in a baking dish and sprinkle with salt and pepper.
  6. Bake for 35–40 minutes until the internal temperature reaches 165°F. Serve hot.
