Grilled Stuffed Chicken

Ingredients

The stuffing

  • ½ pieces bacon, diced
  • 3 cloves garlic, minced
  • 1 shallot diced
  • 1 cup broccoli, chopped fine
  • 1 cup mushrooms, chopped fine

The chicken

  • 2 pieces boneless skinless chicken breasts
  • to taste salt and pepper
  • to taste butcher's twine

Additional veggies

  • as needed whatever veggies you have on hand to grill

Instructions

  1. Prepare the grill and get it ready for cooking.
  2. Chop the vegetables you want to grill, season them, and set aside.
  3. In a skillet, cook the diced bacon until it shrinks and releases fat.
  4. Add the shallot, garlic, mushrooms, and broccoli to the skillet and stir until cooked down.
  5. Slice the chicken breasts open, spoon the stuffing mixture inside, fold, and tie with butcher's twine.
  6. Season the stuffed chicken with salt and pepper.
  7. Grill the chicken and veggies, cooking the chicken for about 6-8 minutes per side.
  8. Remove from the grill and let everything cool for a couple of minutes before serving.
