Grilled Stuffed Chicken

The chicken

boneless skinless chicken breasts

butcher's twine
Additional veggies

whatever veggies you have on hand to grill
Instructions
- Prepare the grill and get it ready for cooking.
- Chop the vegetables you want to grill, season them, and set aside.
- In a skillet, cook the diced bacon until it shrinks and releases fat.
- Add the shallot, garlic, mushrooms, and broccoli to the skillet and stir until cooked down.
- Slice the chicken breasts open, spoon the stuffing mixture inside, fold, and tie with butcher's twine.
- Season the stuffed chicken with salt and pepper.
- Grill the chicken and veggies, cooking the chicken for about 6-8 minutes per side.
- Remove from the grill and let everything cool for a couple of minutes before serving.
