Baked Stuffed Chicken Breast

Instructions
- Preheat the oven to 400°F.
- Heat an oven-safe skillet on medium-high heat with olive oil and sauté the green peppers, onions, celery, and sausage for 3-4 minutes.
- Add garlic and stir, then set the mixture aside.
- Cut a deep pocket lengthwise into each chicken breast without cutting through the other side.
- Stuff each chicken breast with the vegetable and sausage mixture and shredded cheese.
- Season the outsides of the chicken breasts with the spice rub.
- Melt butter in the same skillet, then sear the chicken breasts for 3 minutes on one side, flip, and sear for another 2-3 minutes.
- Transfer the skillet to the oven and bake until the internal temperature reaches at least 165°F, about 20 minutes or more.
- Remove from the oven and cool before serving.
