Baked Stuffed Chicken Breast

Ingredients

The chicken and filling

  • 4 large chicken breasts
  • 1 tablespoon unsalted butter
  • ½ cup chopped green peppers
  • ½ cup chopped white onions
  • 1 stalk celery, finely chopped
  • 2 oz sausage or bacon, diced into small chunks
  • 2-3 cloves garlic, minced
  • ½ cup shredded cheddar cheese

The seasoning

  • 2 teaspoons brown sugar or sweetener
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Heat an oven-safe skillet on medium-high heat with olive oil and sauté the green peppers, onions, celery, and sausage for 3-4 minutes.
  3. Add garlic and stir, then set the mixture aside.
  4. Cut a deep pocket lengthwise into each chicken breast without cutting through the other side.
  5. Stuff each chicken breast with the vegetable and sausage mixture and shredded cheese.
  6. Season the outsides of the chicken breasts with the spice rub.
  7. Melt butter in the same skillet, then sear the chicken breasts for 3 minutes on one side, flip, and sear for another 2-3 minutes.
  8. Transfer the skillet to the oven and bake until the internal temperature reaches at least 165°F, about 20 minutes or more.
  9. Remove from the oven and cool before serving.
