Grown-Up Guacamole Bacon Grilled Cheese Sandwich

bacon, cooked and sliced in half

olive oil

shredded cheddar cheese
Instructions
- Cut the avocado in half and remove the pits.
- Scoop out the avocado into a medium bowl and coat with lime juice.
- Add salt and mash until smooth, then fold in cilantro, tomatoes, and red onion.
- Heat a skillet on medium-high heat and add 1 teaspoon of olive oil.
- Place a slice of bread in the skillet, top with half of the guacamole, 2 slices of bacon, and half of the cheese.
- Top with another slice of bread and cook for 2-3 minutes until browned.
- Flip the sandwich and cook for another 2-3 minutes until browned and crisp.
- Repeat the steps for the second sandwich.
