Bacon Guacamole

Ingredients

  • 8 ounces bacon, cooked and crumbled
  • 2 large avocados
  • 1 tablespoon lime juice
  • ½ teaspoon cumin
  • ½ cup chopped red onion
  • 1 tablespoon minced garlic
  • 2 chipotle chiles in adobo sauce, seeded and chopped
  • 1 medium tomato, seeded and diced
  • ¼ cup cilantro, chopped

Instructions

  1. Cook the bacon according to package directions, then allow it to cool and crumble it.
  2. In a medium bowl, mash the avocados to your desired consistency.
  3. Add lime juice and cumin to the mashed avocados, and season with salt and pepper to taste.
  4. Gently stir in the chopped onion, garlic, chipotle chiles, tomato, and cilantro.
  5. Cover the guacamole with plastic wrap directly on the surface and refrigerate until ready to serve.
  6. Stir in the crumbled bacon just before serving.
