Instructions
- Prepare the guacamole by mashing the avocados in a bowl and mixing in the onion, garlic, jalapeño, cilantro, lime juice, salt, and pepper.
- Fold in the chopped tomato into the guacamole mixture.
- Heat a pan or griddle over medium-high heat.
- Spread guacamole on both slices of bread and place cheese on top.
- Butter the outer sides of the bread and grill one side for about 2 minutes until golden and crispy.
- Flip the sandwich and grill the other side until golden brown.
- Repeat for the second sandwich and serve warm.
