Guacamole Grilled Cheese Sandwich

Ingredients

Guacamole

  • 2 whole ripe avocados
  • ½ small onion, minced
  • 1 clove garlic, minced
  • 1 small jalapeño, minced
  • 2 tablespoons cilantro leaves, finely chopped
  • 1 tablespoon fresh lime juice
  • ½ teaspoon coarse salt
  • 1 dash freshly grated black pepper
  • 1 whole Roma tomato, chopped

Grilled Cheese

  • 4 slices crusty white bread
  • 4 slices Cheddar cheese
  • to taste none Butter for buttering bread

Instructions

  1. Prepare the guacamole by mashing the avocados in a bowl and mixing in the onion, garlic, jalapeño, cilantro, lime juice, salt, and pepper.
  2. Fold in the chopped tomato into the guacamole mixture.
  3. Heat a pan or griddle over medium-high heat.
  4. Spread guacamole on both slices of bread and place cheese on top.
  5. Butter the outer sides of the bread and grill one side for about 2 minutes until golden and crispy.
  6. Flip the sandwich and grill the other side until golden brown.
  7. Repeat for the second sandwich and serve warm.
