Garlicky Avocado Grilled Cheese with Tomato Pesto

Ingredients

The butter mixture

  • 3 tablespoons salted butter
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon dried thyme

The sandwich

  • 2 slices whole wheat white bread
  • 1 tablespoon sun dried tomato pesto
  • ½ avocado mashed
  • 4-5 slices provolone cheese
  • 1 teaspoon olive oil

Instructions

  1. Combine the butter, onion powder, garlic powder, kosher salt, and dried thyme in a small bowl.
  2. Spread the butter mixture on one side of each slice of bread, then place the bread buttered side down.
  3. Layer the bottom slice of bread with provolone cheese, followed by mashed avocado and sun dried tomato pesto, then top with more provolone and the other slice of bread.
  4. Spread the butter mixture on the top of the sandwich.
  5. Heat a non-stick pan over low heat, add olive oil and some of the butter mixture, then add the sandwich and cover.
  6. Cook for 3-4 minutes until golden, checking to ensure it doesn't burn.
  7. Flip the sandwich and cook for an additional 2-3 minutes until the other side is golden and the cheese is melted.
  8. Serve hot.
