Garlicky Avocado Grilled Cheese with Tomato Pesto

The sandwich

whole wheat white bread

Instructions
- Combine the butter, onion powder, garlic powder, kosher salt, and dried thyme in a small bowl.
- Spread the butter mixture on one side of each slice of bread, then place the bread buttered side down.
- Layer the bottom slice of bread with provolone cheese, followed by mashed avocado and sun dried tomato pesto, then top with more provolone and the other slice of bread.
- Spread the butter mixture on the top of the sandwich.
- Heat a non-stick pan over low heat, add olive oil and some of the butter mixture, then add the sandwich and cover.
- Cook for 3-4 minutes until golden, checking to ensure it doesn't burn.
- Flip the sandwich and cook for an additional 2-3 minutes until the other side is golden and the cheese is melted.
- Serve hot.
