Pesto Grilled Cheese with Sun Dried Tomatoes

Instructions
- Spread ½ Tbsp butter on one side of each slice of bread and 1 Tbsp pesto on the opposite side.
- Cut the sun dried tomatoes into small pieces and sprinkle them over one pesto-coated side of the bread.
- Add the mozzarella on top of the sun dried tomatoes.
- Close the sandwich with the other slice of bread, pesto side facing in.
- Heat the sandwich in a skillet over medium-low heat until golden brown on one side, then flip and cook until golden brown on the other side and the cheese is melted.
- Serve hot.
