Turkey Pesto Grilled Cheese Sandwiches

pesto

deli turkey

shredded Monterey Jack cheese

shredded cheddar cheese
Instructions
- Heat a skillet over medium heat.
- Spread one tablespoon of softened butter onto one slice of bread and place it butter side down in the skillet.
- Spread one tablespoon of pesto on the top surface of the bread.
- Layer with ¼ cup of Monterey Jack cheese and half of the turkey.
- Add another layer of cheese with ¼ cup of cheddar.
- Spread one tablespoon of pesto on a new slice of bread and butter the other side.
- Place this slice, pesto side down, onto the cheddar layer.
- Press down lightly with a spatula and cook for 2-3 minutes until browned.
- Flip the sandwich and cook for another 2-3 minutes until browned and cheese is melted.
- Repeat to make the second sandwich.
- Cut both sandwiches in half and serve warm.
