Turkey Pesto Grilled Cheese Sandwiches

Ingredients

  • 4 slices sourdough bread
  • ¼ cup unsalted butter
  • ¼ cup pesto
  • 4 ounces deli turkey
  • ½ cup shredded Monterey Jack cheese
  • ½ cup shredded cheddar cheese

Instructions

  1. Heat a skillet over medium heat.
  2. Spread one tablespoon of softened butter onto one slice of bread and place it butter side down in the skillet.
  3. Spread one tablespoon of pesto on the top surface of the bread.
  4. Layer with ¼ cup of Monterey Jack cheese and half of the turkey.
  5. Add another layer of cheese with ¼ cup of cheddar.
  6. Spread one tablespoon of pesto on a new slice of bread and butter the other side.
  7. Place this slice, pesto side down, onto the cheddar layer.
  8. Press down lightly with a spatula and cook for 2-3 minutes until browned.
  9. Flip the sandwich and cook for another 2-3 minutes until browned and cheese is melted.
  10. Repeat to make the second sandwich.
  11. Cut both sandwiches in half and serve warm.
