Turkey Pesto Panini

Ingredients

  • 4 slices bread
  • 1 tablespoon olive oil
  • ¼ cup pesto
  • 2 tablespoons mayonnaise
  • 6 ounces thinly sliced turkey breast
  • 3 ounces sliced provolone cheese
  • 1 cup baby spinach
  • ½ cup sliced roasted red pepper
  • 1 medium tomato

Instructions

  1. Preheat the panini press.
  2. Brush one side of each piece of bread with olive oil.
  3. Spread pesto on two slices of bread and mayonnaise on the other two slices.
  4. Layer turkey on top of the pesto and add provolone cheese.
  5. Add spinach, roasted red pepper, and tomato slices.
  6. Top with the remaining two slices of bread, mayo side down.
  7. Place the sandwiches on the preheated panini press and close the lid.
  8. Cook for about 5 minutes until the cheese is melted and the sandwiches are golden brown.
