Turkey Avocado Panini

Ingredients

  • ½ medium red onion
  • ¼ cup red wine vinegar
  • 2 tablespoons mayonnaise
  • 1 medium avocado
  • ½ teaspoon sea salt
  • 8 slices bread
  • 2 tablespoons olive oil
  • 1 cup fresh spinach
  • 8 ounces deli turkey or cooked and sliced turkey
  • 4 ounces sliced Monterey Jack or mozzarella cheese

Instructions

  1. Preheat the panini press.
  2. Soak the sliced onion in red wine vinegar for 10 minutes.
  3. In a bowl, mix mayonnaise and mashed avocado with salt.
  4. Brush one side of each bread slice with olive oil and spread the avocado mixture on the other side.
  5. On four slices of bread, layer spinach, drained onions, turkey, and cheese.
  6. Top with the remaining bread slice, avocado side down.
  7. Cook the sandwiches in the panini press for 4-5 minutes until golden brown and cheese is melted.
