Turkey Avocado Panini

Instructions
- Preheat the panini press.
- Soak the sliced onion in red wine vinegar for 10 minutes.
- In a bowl, mix mayonnaise and mashed avocado with salt.
- Brush one side of each bread slice with olive oil and spread the avocado mixture on the other side.
- On four slices of bread, layer spinach, drained onions, turkey, and cheese.
- Top with the remaining bread slice, avocado side down.
- Cook the sandwiches in the panini press for 4-5 minutes until golden brown and cheese is melted.
