Parmesan Crusted Pesto Grilled Cheese Sandwich

ciabatta or French bread

soft butter for brushing the bread

mozzarella cheese

basil pesto

finely shredded Parmesan cheese
Instructions
- 1. Heat a non-stick pan over medium heat.
- 2. Butter the outside of each slice of bread.
- 3. Spread basil pesto on the inside of each slice of bread.
- 4. Place mozzarella cheese on one slice of bread and top with the other slice.
- 5. Sprinkle half of the Parmesan cheese on the outside of one side of the sandwich.
- 6. Grill the sandwich cheese side down for 2 minutes until golden brown.
- 7. Sprinkle the rest of the Parmesan on the other side and cook until golden brown and cheese has melted, about 2 more minutes.
- 8. Serve immediately.
