Caprese Grilled Cheese Sandwich

Ingredients

The sandwich

  • 2 slices sourdough or rustic bread
  • 1 cup fresh mozzarella cheese, sliced
  • 1 cup sliced summer tomatoes
  • 1 tablespoon butter
  • 1 tablespoon olive oil

The Arugula Pesto

  • 2 large cloves garlic
  • ¼ cup smoked almonds
  • 1 cup packed basil leaves
  • 2 cups packed arugula
  • cup olive oil
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon kosher salt
  • to taste cracked pepper

Instructions

  1. Preheat the oven to 375°F.
  2. Make the Arugula Pesto by blending garlic, smoked almonds, basil, and arugula in a food processor until finely chopped.
  3. Add olive oil, lemon juice, salt, and pepper to the processor and pulse until combined.
  4. Layer mozzarella, tomatoes, and arugula pesto between two slices of bread.
  5. Heat butter and olive oil in a heavy-bottom skillet, then crisp and brown each side of the sandwich.
  6. Transfer the skillet to the oven and bake until the cheese is melty, about 10 minutes.
  7. Add fresh arugula to the sandwich after removing from the oven.
