Caprese Grilled Cheese Sandwich

The Arugula Pesto

Instructions
- Preheat the oven to 375°F.
- Make the Arugula Pesto by blending garlic, smoked almonds, basil, and arugula in a food processor until finely chopped.
- Add olive oil, lemon juice, salt, and pepper to the processor and pulse until combined.
- Layer mozzarella, tomatoes, and arugula pesto between two slices of bread.
- Heat butter and olive oil in a heavy-bottom skillet, then crisp and brown each side of the sandwich.
- Transfer the skillet to the oven and bake until the cheese is melty, about 10 minutes.
- Add fresh arugula to the sandwich after removing from the oven.
