Pesto and Artichoke Grilled Cheese

Ingredients

  • 2 tablespoons butter, softened
  • 4 slices whole-grain bread
  • 4 tablespoons Spinach Basil Pesto
  • 4 slices Arla Dofino® Creamy Havarti cheese
  • cup sliced artichoke hearts
  • to taste sea salt

Instructions

  1. Butter the outsides of the bread slices.
  2. Spread pesto evenly on the insides of the bread slices.
  3. Layer a slice of Havarti on the bottom piece of bread, add artichoke hearts, and top with another slice of Havarti.
  4. Place the other piece of bread on top to create a sandwich.
  5. Heat a skillet over medium-low heat and place the sandwiches butter side down.
  6. Cook for 4-5 minutes until the cheese melts and the bread is golden brown.
  7. Flip the sandwich and cook for an additional 3-4 minutes.
  8. Remove from heat, sprinkle with sea salt, cut in half, and serve immediately.
